Soy sauce chicken 酱油鸡


Soy sauce chicken made easy with store bought soy sauce marinade.

I used the whole bottle for 5 skin-on, bone-in chicken thighs. I added 1 bowl of water to the pot, together with the chicken thighs, 2 cloves of garlic, 5 slices of ginger and 8 dried mushrooms.

Bring it to a boil then simmer on low for half an hour. The sauce is on a sweeter side so I added 1tbs of soy sauce and 1 tsp of salt to balance the sweetness. Add in frozen tofu and hard boiled eggs and simmer for another 15-20 mins.

Skim off the chicken fat on the surface and it’s ready to serve! The savory sauce is great with egg noodles too.

Dorot Tikka masala chicken


I am trying out the Dorot tikka masala chicken marinating sauce. This cost SGD7.50 and there are 5 frozen bar of sauce.20131130-150644.jpg

With 3 skinless and boneless chicken thighs, marinate with 2 bar of sauce for 30mins, then pan-fried until brown.
I like that the sauce is individually frozen, just pop out the sauce whenever I need and it taste amazing. I would marinate the chicken longer than the 30mins or even overnight to get the full flavor into the chicken.

Meals prepping for the week 2


Theme of the week: Korean! I have some leftover hot pepper sauce mix from the bibimbap that we had last weekend, so let’s make spicy hot pepper chicken and kimchi chicken.

Prepare and chop up all the needed ingredients. A quarter of a cabbage, 1 carrots, 1 onion, 3 cloves of garlics, 3-4 slices of ginger, 1 bowl of kimchi, chili powder (optional for added spiciness), hot pepper sauce and of course, 6 chopped boneless chicken tights. I’m going to make a bigger batch of kimchi chicken, as it can transform into kimchi stew later of the week.

Spicy Korean Chicken
In a big pot, add in 1 quarter of the chopped chicken, carrots, cabbages, half of the chopped garlics and hot pepper sauce (+ chili powder for extra kick). On medium heat, stir well and cook uncovered for 15-20 mins.


Kimchi Chicken
In a large pot, add in the rest of the chopped chicken, garlics, ginger,onions, kimchi and a ts of sugar. Over medium heat, stir well and cook covered for 15-20 mins.


Garnish with chopped spring onions or green chillies. Best serve with a bowl of hot steamy rice. YUM!

Update: Kimchi Chicken Stew
In a pot, add in the leftover kimchi chicken, cubed half a firm tofu, spring onions, chicken stocks and bring to a boil. Once boiled, crack in an egg and ready to serve. Taste for seasoning, I added another ts of fish sauce.

Meals prepping for the week

My first meals prepping for the week, decided to do all chicken dishes since I have defrosted a bag of 2 kg chicken tights.

I have to prepare 3 dinners this week for the 2 of us so on the menu are teriyaki chicken with quick stir fry onion, BBQ chicken with caramelized onions and lemon honey chicken . It took me nearly 2 hours to prepare the ingredients and pack the meals in containers.

First thing I did was washed the chicken thighs, removed all the skins and chopped it into bite size pieces. Seasoned it with salt and pepper and let it marinate while I cut the onions. I used 1 yellow onions and 5 red onions as these are what I have on hand. I chopped some into 1 inch square and the rest into strips.

Pan fried the chicken in batches and remove from the pan once golden brown.

Teriyaki Chicken

In a small bowl, prepare 3 tbs of light soy sauce, 3 tbs of mirin, 3 tbs of sake, 1 tbs of brown sugar. Stir lightly to dissolve the sugar. Put in a portion of the browned chicken tight back into the pan, on medium heat, stir in the sauce and cook it down until thickens.

BBQ chicken

Put a potion of the browned chicken into a pan, stir in some store bought BBQ sauce and 2 tbs of water.

Honey lemon chicken

Put in a portion of the browned chicken into a pan, on medium heat, quick pan fried the chicken with 2 tbs of light soy sauce, squeezed in the juice of half a lemon and about 2-3tbs of honey. Done when the sauce thickens a little. I throw in some sliced lemon for garnish!
